  • 1 cup frozen pineapple chunks
  • 1/2 cup frozen mango chunks
  • 1 tbsp fresh lime juice about 1/2 a lime
  • 1 tsp lime zest
  • 1/2 cup unsweetened almond milk or coconut water for a lighter texture
  • 1 tbsp chia seeds
  • 1 tsp fresh ginger, grated
  • 1 pinch sea salt

Notes

STORAGE: This bowl is best enjoyed immediately. If you need to store the blended base, keep it in a sealed container in the refrigerator for up to 24 hours; it will thicken, so stir in a splash of liquid before serving. MAKE-AHEAD: Pre-portion the frozen fruit, spinach, and other dry ingredients into blender containers the night before for a quick morning. SUBSTITUTIONS: Use kale instead of spinach. Banana can replace mango for extra creaminess. Any plant-based milk works. For a nut-free version, use oat milk or coconut milk. TOPPING IDEAS: Sliced banana, granola, hemp seeds, cacao nibs, or edible flowers.
