  • 4 cups water divided into 2 cups boiling and 2 cups cold
  • 0.5 cup fresh lemon juice about 3-4 large lemons
  • 0.33 cup raw honey adjust to taste
  • 1 tsp lemon zest finely grated
  • 2 cups ice cubes for serving
  • 4 sprigs fresh mint for garnish

Notes

For a layered effect, pour the lemon juice over the back of a spoon. You can prepare the blue tea concentrate up to 3 days in advance and store it in the refrigerator. To make it vegan, substitute the honey with agave nectar or simple syrup.
