  • 1 cup fresh lemon juice about 5-6 large lemons
  • 1 cup red dragon fruit cubed, must be red/pink flesh variety for color
  • 0.75 cup granulated sugar adjust to taste
  • 4 cups cold water divided
  • 1 tsp lemon zest finely grated
  • 1 cup ice cubes for serving
  • 4 sprigs fresh mint for garnish

Notes

For the best color, ensure you buy 'Red Pitaya' (red skin, red flesh). If you can only find white-fleshed dragon fruit, the taste will be the same but the color will remain yellow. Store leftovers in a sealed jar in the refrigerator for up to 3 days. Shake well before serving as natural separation may occur.
