  • 1 tbsp cornstarch for crispiness
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp neutral oil (like avocado or grapeseed) optional, for extra crisp
  • 1/4 cup creamy peanut butter natural, unsweetened preferred
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp maple syrup or honey (for non-vegan)
  • 1 tbsp rice vinegar
  • 1 tsp sriracha or chili garlic sauce optional, for heat
  • 2-3 tbsp warm water to thin sauce to desired consistency
  • 1 tbsp chopped peanuts for garnish
  • 1 tbsp sliced green onions for garnish

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The tofu will soften but can be reheated in the air fryer for a few minutes to regain some crispiness. Make-Ahead Tip: You can press and cube the tofu up to 2 days in advance. The peanut sauce can also be made ahead and stored in the fridge for up to 5 days. Variations: For a different flavor, add 1 teaspoon of grated ginger or a clove of minced garlic to the sauce. Substitute almond butter for peanut butter if desired. Serving Suggestions: Serve over cauliflower rice for a low-carb option, or with a side of steamed broccoli and carrots for extra vegetables.
