Ingredients

  • 1.5 lb chicken breasts boneless, skinless, about 2 large breasts
  • 0.25 cup olive oil extra virgin
  • 2 tbsp fresh lemon juice about 1/2 large lemon
  • 1 tbsp fresh dill chopped, or 1 tsp dried dill
  • 2 clove garlic minced
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tsp paprika sweet or smoked
  • 1 whole lemon sliced into rounds for garnish

Notes

Storage: Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or oven to prevent drying out. Make-Ahead: The marinade can be prepared up to 2 days in advance and stored in the fridge. You can also marinate the raw chicken in the fridge for up to 8 hours before baking. Substitutions: You can substitute dried oregano for the dill, or use lime juice instead of lemon. Serving Suggestions: This chicken pairs beautifully with roasted potatoes, steamed asparagus, or a light quinoa salad.
