  • 2 tbsp olive oil divided
  • 1/2 cup panko breadcrumbs
  • 2 tbsp fresh parsley finely chopped
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tbsp lemon zest from about 1 lemon
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt divided
  • 1/4 tsp black pepper freshly ground

Notes

For make-ahead: Prepare the crumb topping mixture up to 2 days in advance and store in an airtight container in the refrigerator. Assemble and bake just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in a 350°F oven for 5-8 minutes to re-crisp the topping. For a gluten-free version, use certified gluten-free panko breadcrumbs. This recipe pairs wonderfully with a simple side of steamed asparagus or a fresh green salad.
