  • 2 large eggs room temperature
  • 4 cups all-purpose flour plus extra for dusting (about 500g)
  • 1/2 cup unsalted butter softened for filling
  • 1 cup brown sugar packed for filling
  • 3 tbsp ground cinnamon for filling
  • 4 oz cream cheese softened for frosting
  • 1/4 cup unsalted butter softened for frosting
  • 2 cups powdered sugar sifted for frosting
  • 1 tsp vanilla extract for frosting
  • 1/8 tsp salt for frosting

Notes

Storage: Cover tightly and store at room temperature for 2 days or refrigerate for up to 5 days. Reheat individual rolls in the microwave for 20-30 seconds. Make-Ahead: Prepare rolls through step 8, cover tightly, and refrigerate overnight. Let come to room temperature and rise for 30 minutes before baking. Variations: Add 1/2 cup chopped pecans or walnuts to the filling, or mix 1/2 cup raisins into the cinnamon sugar. For extra gooey rolls, add 2 tablespoons heavy cream to the frosting.
