Ingredients

Ingredients

  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tbsp olive oil divided
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 cup long-grain white rice uncooked, rinsed
  • 2 cups low-sodium chicken broth
  • 1 cup frozen mixed vegetables peas, carrots, corn blend
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste
  • 0.5 cup grated Parmesan cheese optional, for garnish

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop, adding a splash of broth or milk to loosen the sauce.
Make-Ahead: You can prepare the chicken and vegetables ahead of time. For best results, assemble and cook the dish fresh.
Substitutions: For a lighter option, use half-and-half or whole milk instead of heavy cream (the sauce will be thinner). You can also use brown rice, but increase the broth to 2.5 cups and cook time by 10-15 minutes.
Serving Suggestion: Serve with a simple green salad or steamed broccoli for a complete meal.
