Ingredients

  • 1 lb lean ground beef 90/10 or 93/7 lean-to-fat ratio
  • 1.5 lb Yukon Gold potatoes cut into ½-inch cubes
  • 1 large yellow onion diced
  • 1 medium bell pepper any color, diced
  • 2 tbsp olive oil divided
  • 2 tsp paprika smoked or sweet
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt or to taste
  • ½ tsp black pepper freshly ground
  • ¼ cup fresh parsley chopped, for garnish

Notes

Storage: Cool completely and store in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until warmed through. Make-Ahead: You can brown the ground beef and chop the vegetables up to 2 days in advance; store separately in the fridge. Variations: Add 1 cup of shredded cheddar cheese during the last 5 minutes of baking for a cheesy version. For extra flavor, stir in 1 tablespoon of Worcestershire sauce with the cooked beef. Serving Suggestion: Serve with a side of sour cream, a fried egg on top, or a simple green salad.
