  • 1/4 cup extra virgin olive oil plus more for drizzling

  • 1 clove garlic minced or grated
  • 1/4 cup shelled pistachios toasted and roughly chopped
  • 1 tbsp fresh dill chopped, for garnish
  • 1/4 tsp black pepper freshly ground
  • 1 pinch red pepper flakes optional, for heat

Notes

Storage: Store in an airtight container in the refrigerator for up to 4 days. The dip will firm up when chilled; let it sit at room temperature for 20-30 minutes before serving. Make-Ahead: You can whip the feta base up to 2 days in advance. Wait to add the toppings (olive oil, pistachios, herbs) until just before serving for the best texture and appearance. Variations: Add a tablespoon of fresh chopped mint or parsley instead of dill. For a smoky flavor, add a pinch of smoked paprika. For extra creaminess, add 1-2 tablespoons of cream cheese.
