Ingredients

  • 1 cup unsalted butter softened at room temperature
  • 0.5 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
  • 0.33 cup elderflower jam or preserves
  • 0.33 cup mixed berry jam or preserves such as raspberry or blueberry
  • 2 tbsp powdered sugar for dusting (optional)

Notes

Storage: Store cooled cookies in an airtight container at room temperature for up to 5 days. Layers of parchment paper between cookies will prevent sticking. Make-Ahead: The dough balls can be prepared, placed on a baking sheet, and frozen solid. Transfer to a freezer bag and store for up to 3 months. Bake from frozen, adding 1-2 minutes to the baking time. Substitutions: For a different flavor, try lemon curd or apricot preserves. If elderflower jam is unavailable, a high-quality floral honey mixed with a teaspoon of lemon zest can be used. For a gluten-free version, use a 1:1 gluten-free all-purpose flour blend. Serving Suggestion: Perfect with herbal tea, coffee, or as part of a dessert platter.
