Ingredients

  • 8 oz Halloumi cheese Cut into 1-inch cubes
  • 2 tbsp Honey Or maple syrup
  • 1 tbsp Olive oil For brushing
  • 1 tsp Dried oregano Optional
  • 1/2 cup Plain Greek yogurt Full fat recommended
  • 2 tbsp Fresh mint leaves Finely chopped
  • 1 tsp Lemon zest From one lemon
  • 1 tsp Lemon juice Freshly squeezed
  • 1 pinch Salt To taste
  • 1 pinch Black pepper Freshly ground
  • 4 Wooden skewers Soaked in water for 20 mins

Notes

Storage: Best served immediately while hot and crisp. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, but will lose their crispness. Reheat in a toaster oven or air fryer to restore texture. Make-Ahead: The mint yogurt dip can be made up to 24 hours in advance. Variations: Add a pinch of red pepper flakes to the honey glaze for a spicy kick. You can also add vegetables like cherry tomatoes or bell pepper chunks to the skewers (note: cook time may vary).
