  • 1 tsp ground black pepper
  • 1 cup fresh pineapple chopped
  • 1 tbsp lime juice
  • 1 tbsp red onion finely diced
  • 1 tsp red chili flakes optional for heat
  • 8 wooden skewers soaked in water for 30 minutes

Notes

Storage: Leftover skewers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave. The dipping sauce is best fresh but can be stored separately for up to 2 days. Make-Ahead: Marinate the chicken up to 4 hours ahead; prepare the sauce a few hours before serving.
