  • 500 g seedless watermelon cut into 1-inch cubes
  • 250 g halloumi cheese sliced into 1/2-inch thick pieces
  • 2 cups baby arugula washed and dried
  • 0.5 cup fresh mint leaves roughly torn
  • 0.25 cup red onion very thinly sliced
  • 3 tbsp extra virgin olive oil divided
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 0.25 tsp black pepper freshly cracked
  • 2 tbsp toasted pine nuts for garnish

Notes

To keep the watermelon crisp, do not dress the salad until right before serving. For a variation, add cucumber slices for extra crunch. Halloumi is best served immediately as it becomes rubbery once it cools completely. If you don't have pine nuts, slivered almonds or pumpkin seeds make a great substitute.
