Ingredients

Ingredients

  • 2 whole frozen bananas peeled and sliced before freezing for easier blending
  • 1 cup unsweetened almond milk or any preferred dairy-free or dairy milk
  • 0.5 cup Greek yogurt plain or vanilla for extra creaminess
  • 1 cup fresh baby spinach packed tightly for a vibrant green color without the taste
  • 0.25 tsp peppermint extract start with a small amount as it is very potent
  • 2 tbsp mini dark chocolate chips plus extra for garnish
  • 1 tsp honey optional, depending on desired sweetness
  • 0.5 tsp vanilla extract enhances the dessert-like flavor profile

Notes

For a thicker, shake-like consistency, use less milk or add 1/4 cup of ice. To make this vegan, use coconut yogurt or extra banana instead of Greek yogurt. This is best served immediately, but can be frozen into popsicle molds for a frozen mint chip treat later.
