  • 0.75 cup unsalted butter softened to room temperature
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 1 large egg room temperature
  • 1 tsp pure vanilla extract
  • 1 pint vanilla ice cream or flavor of choice, slightly softened

Notes

Storage: Wrap sandwiches individually in plastic wrap and store in an airtight container in the freezer for up to 2 weeks. Make-Ahead: Bake and freeze the cookies for up to a month. Assemble sandwiches directly from frozen with softened ice cream. Variations: Use chocolate chip cookies or add cocoa powder to the dough. Try different ice cream flavors like mint chocolate chip, strawberry, or cookies and cream. For neater edges, after freezing for 1 hour, you can trim any excess ice cream with a sharp knife.
