  • 2 tsp baking powder
  • 0.5 tsp salt
  • 16 oz cream cheese softened for frosting
  • 0.5 cup powdered sugar adjusted to taste
  • 0.25 cup pistachios crushed for garnish

Notes

Store the cake in the refrigerator due to the yogurt and cream cheese frosting; it stays moist for up to 3 days. For a more intense mango flavor, reduce 1 cup of mango puree on the stove by half before adding to the batter. You can make the sponges a day in advance and wrap them in plastic wrap once cooled.
