- 1.5 lb cod fillets 4 (6-ounce) fillets, skinless, patted very dry with paper towels
- 3 tbsp extra virgin olive oil divided
- 4 cloves garlic minced
- 1 tsp smoked paprika provides the smoky flavor
- 1 tsp dried oregano Greek variety preferred
- 1 tsp lemon zest freshly grated
- 2 tbsp fresh lemon juice about 1/2 large lemon
- 1 tsp kosher salt plus more for seasoning
- 0.5 tsp black pepper freshly ground
- 2 tbsp fresh parsley chopped, for garnish
- 2 tbsp fresh dill chopped, for garnish
