  • 4 medium ripe peaches pitted and roughly chopped (about 3 cups)
  • 1 cup fresh lemon juice from about 6-8 lemons
  • 2 cup cold water or sparkling water for fizz
  • 1 tsp vanilla extract
  • 0.25 tsp ground cinnamon
  • ice for serving

Notes

Storage: Keep refrigerated in a sealed pitcher for up to 3 days. Shake or stir before serving as separation may occur. Make-ahead: Prepare the ginger syrup and peach puree up to 2 days ahead; combine with remaining ingredients just before serving. Substitutions: Use honey or maple syrup instead of sugar for a different sweetness; frozen peaches work well when fresh aren't available. For a fizzy version, replace the cold water with sparkling water or club soda just before serving.
