  • 0.5 medium English cucumber roughly chopped, skin on
  • 1 cup coconut water chilled
  • 0.5 cup plain Greek yogurt or dairy-free alternative
  • 1 tbsp fresh lime juice about half a lime
  • 1 tsp fresh ginger grated
  • 5-6 leaf fresh mint leaves plus extra for garnish
  • 1 cup ice cubes optional if using frozen fruit

Notes

Storage: Best enjoyed immediately. Any leftovers can be stored in a sealed container in the refrigerator for up to 24 hours; shake or stir well before drinking as separation may occur. Make-Ahead: Pre-chop the pineapple and cucumber and store them in a freezer bag to freeze, creating a ready-to-blend smoothie pack.
