  • 1 cup coconut water chilled
  • 0.5 cup Greek yogurt plain, full-fat or low-fat
  • 0.25 cup fresh mint leaves packed
  • 1 inch fresh ginger root peeled and roughly chopped
  • 1 tbsp fresh lime juice about half a lime
  • 1 tsp honey optional, to taste
  • 0.5 cup ice cubes optional, for thicker consistency

Notes

To make this vegan, substitute the Greek yogurt with coconut yogurt or 1/4 avocado for creaminess. This smoothie is best consumed immediately to benefit from the active enzymes, but can be stored in an airtight jar for up to 12 hours. For a boost in fiber, add 1 tablespoon of chia seeds before blending.
