  • 3/4 cup granulated sugar
  • 1 tbsp fresh lemon zest finely grated (about 2 large lemons)
  • 1 tbsp fresh lemon juice
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sparkling sugar or coarse sugar for rolling

Notes

Storage: Keep in an airtight container at room temperature for up to 1 week. Make-ahead: Dough can be rolled into balls, coated in sugar, and frozen on a baking sheet. Transfer to a freezer bag once solid and bake from frozen, adding 1-2 minutes to the bake time. Variations: Add 1/2 tsp poppy seeds to the dough, or substitute the lemon with orange zest and juice. For softer cookies, bake for the minimum time.
