  • 2 cups water divided into boiling and cold
  • 0.5 cup fresh lemon juice about 3-4 large lemons
  • 3 tbsp raw honey adjust to taste
  • 1 tsp fresh ginger finely grated
  • 1 cup ice cubes for serving
  • 4 sprigs fresh mint for garnish

Notes

To make ahead, prepare the blue tea concentrate and store in the fridge for up to 3 days. For a sparkling version, replace the cold water with chilled sparkling mineral water. If vegan, substitute honey with agave nectar or maple syrup.
