  • 1 cup fresh strawberries hulled and sliced
  • 1 cup frozen mixed berries such as blueberries and raspberries
  • 1 cup unsweetened almond milk or any plant-based milk
  • 1 tbsp pure maple syrup optional, adjust to taste
  • 1 tbsp chia seeds
  • 0.5 cup granola gluten-free if needed
  • 0.25 cup fresh blueberries for topping
  • 2 tbsp unsweetened coconut flakes for topping
  • 4 tsp sliced almonds for topping

Notes

Store any leftover blended base in an airtight container in the freezer for up to 1 month; thaw slightly and re-blend with a splash of milk before serving. For make-ahead, prepare the toppings separately and store in the fridge, blending the base just before serving. Substitute any berries based on preference or availability. For extra protein, add a scoop of vanilla plant-based protein powder to the blender.
