  • 2 tbsp black chia seeds
  • 3 cups filtered water cold
  • 1 tbsp fresh lime juice about half a lime
  • 2 tsp honey or maple syrup for vegan option
  • 4 leaves fresh mint for garnish
  • 1 cup ice cubes

Notes

Best served immediately after the chia seeds have hydrated. You can store this in the refrigerator for up to 24 hours, but the seeds will continue to thicken the liquid. For a sparkling version, use 1.5 cups of water to hydrate the seeds and top with 1.5 cups of sparkling mineral water just before serving.
