Ingredients

  • 2 cup all-purpose flour spooned and leveled
  • 1 cup unsalted butter softened at room temperature
  • 0.75 cup granulated sugar
  • 1 large egg room temperature
  • 2 tsp pure vanilla extract divided
  • 0.5 tsp salt
  • 2 cup powdered sugar sifted
  • 3 tbsp milk or heavy cream plus more if needed

Notes

Storage: Keep filled cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week. For longer storage, unfilled cookies can be frozen for up to 3 months. Make-ahead: The cookie dough can be made and refrigerated for up to 2 days before baking. The filling can be made 1 day ahead and stored covered in the refrigerator; let it come to room temperature and re-whip before using. Variations: Add 1/2 teaspoon of almond extract to the filling for a different flavor, or roll the cookie edges in sprinkles or crushed nuts after filling for decoration. For a firmer filling, use shortening instead of butter.
